Angus’ Angle: Elevated Sips with a Wellness Twist

Angus’ Angle: Sweet Without the Sugar
“Fresh botanicals don’t have to mean one thing”. Angus loves experimenting with natural sweeteners, and Stevia is a go-to: zero calories, no blood sugar spikes, and incredibly potent, meaning a little goes a long way.
How can we replace synthetic mixers with something more vibrant and fresher? One of Angus’ favourite techniques is making an oleo saccharum (aka “oil sugar”) using repurposed citrus peels, herbs, and stevia. Just seal it all in an airtight jar, and the mixture draws out rich oils that form a flavourful, naturally sweet syrup.
Angus’ Angle: Shrubs, Functional Flavour
Shrubs, or vinegar-based flavour infusions, are another tool in Angus’ secret bar kit.
Here are two of his favourites:
- Strawberry & balsamic shrub: Rich, fruity character, this infusion is used to deepen flavour and elevate your cocktails without excess sweetness.
- Cucumber & white wine vinegar shrub: Crisp and refreshing, it works well with Fairmont Waterfront Gin-based cocktails.
These infusions pack flavour without relying on sugar-heavy juices.
Angus’ Angle: Bold Botanicals
Ginger and turmeric aren’t just for smoothies — they shine in cocktails too. Raw ginger brings a warming kick, while turmeric offers earthy depth (and an antioxidant bonus). “These ingredients pair beautifully with darker spirits like whisky or aged rum”.
With fresh ingredients, thoughtful pairings, and a little creativity, your cocktail can become part of your wellness journey.
