Spot Prawns at Home: 3 Simple Recipes for Coastal Cooking
Executive Restaurant Chef Adam Middleton has long championed the vibrant flavours of the Pacific Northwest, and nothing signals the arrival of coastal summer quite like spot prawn season. Caught fresh off the shores of British Columbia, these sweet, delicate prawns are a seasonal treasure – and Chef Adam is sharing his favourite ways to enjoy them at home. From a smoky grilled preparation to a refreshing raw salad and a soul-warming risotto, these recipes bring a taste of Pure Coastal Luxury to your own kitchen.
BBQ Grilled Spot Prawns with Gremolata
Split the prawns down the middle, keeping the shells on for extra flavor and moisture. Drizzle with high-quality olive oil, season generously with salt and freshly ground black pepper, then grill over high heat for about two minutes until just cooked through.
For the gremolata, combine finely chopped parsley, minced garlic, and fragrant lemon zest with a touch of olive oil. For extra depth, incorporate a hint of white wine vinegar and finely chopped capers. Once the prawns come off the grill, finish with a squeeze of fresh lemon juice and a sprinkle of flaky sea salt.
Raw Spot Prawns with Shaved Fennel Salad
Peel and butterfly the prawns, then gently pound them under cling film to fan them out beautifully. Lightly brush with citrus-infused olive oil to enhance their delicate sweetness.
For the salad, thinly shave fennel and toss with freshly squeezed orange juice, a drizzle of olive oil, a touch of Dijon mustard, and a hint of honey for balanced acidity and brightness. Scatter toasted pistachios (or a mix of pistachios and crushed hazelnuts for added complexity) over the dish. Finish with fresh dill or microgreens for a vibrant flourish.
Spot Prawn Risotto
A classic risotto base starts with gently sautéing finely diced onions, celery, and minced garlic in butter until softened and aromatic. Slowly add the spot prawn stock, allowing the rice to absorb the rich, oceanic essence while stirring constantly to develop its signature creamy texture.
In the final moments, fold in tender peas and fresh basil, letting the sweetness and herbal notes brighten the dish. Finish with a drizzle of quality olive oil and a touch of lemon zest to elevate the flavors, while a generous grating of Parmesan provides depth and umami.
