A Truly British Columbian Cocktail 

Supporting our Province-to-Plate philosophy, our Negron-EH features British Columbian craft spirits, bringing together locally made ingredients.

At the heart of the cocktail is Fairmont Waterfront’s signature gin, distilled exclusively for the hotel in partnership with Wayward Distillery. Crafted with honey harvested from our rooftop apiary and local country bees, the gin captures the essence of the West Coast through carefully selected botanicals

The gin is perfectly complemented by Esquimalt Sweet Vermouth and Esquimalt Bitter Red Liqueur from Victoria’s acclaimed Esquimalt Vermouth & Apéritifs. Known for their award-winning, small-batch approach and thoughtfully sourced botanicals, their vermouths and aperitifs lend remarkable depth, balance, and complexity to this sophisticated Canadian twist on an iconic classic.

Make Your Own Negron-EH at Home

Celebrate Canada’s distilling excellence with our Negron-EH from the comfort of your own home.

Ingredients

  • 1.25 oz Wayward Distillery’s Waterfront Gin
  • 1 oz Esquimalt Sweet Vermouth
  • 0.75 oz Esquimalt Bitter Red Liqueur
  • Orange twist, for garnish

Craft Your Negron-EH

  1. Fill a mixing glass with ice.
  2. Add the Waterfront Beekeeper Gin, Esquimalt Sweet Vermouth, and Esquimalt Bitter Red Liqueur.
  3. Stir well until thoroughly chilled.
  4. Strain into a rocks glass over fresh ice.
  5. Garnish with an orange twist.
  6. Enjoy!
