Michael Pagnacco
Canadian-born and originally hailing from Ontario, Chef Michael Pagnacco was lured into the kitchen at an early age. From the start, his fascination with cooking, travel and with the camaraderie of the restaurant environment drew him towards the culinary world. He began working in private restaurants before deciding to hone his skills in culinary management at Algonquin College in Ottawa, where he graduated with honours.

Chef Harris Sakalis
Originally from Greece, Chef Harris Sakalis discovered his passion for cooking in childhood kitchens, inspired by the flavours and traditions of his homeland. His culinary journey took him from the Caribbean to the Middle East and North America, including time in Michelin-starred restaurants. With over 25 years of international experience, Chef Harris now brings his “simple but sophisticated” style and a deep commitment to sustainability to the kitchen at Fairmont Waterfront.
